Can my dog (Keeshond) eat potato skins?

He waits so patiently while I peel them. I have given him a few and he nearly takes my fingers off, lol.

I wouldn't recommend giving your dog potato skins. They can be very toxic, especially if greenish in color. Potato Peelings and Green Potatoes contain Oxalates, which can affect the digestive, nervous, and urinary systems. Even if it doesn't make him sick when you are feeding them to him, small amounts over a long period of time can build up and cause damage.

You can give your dog cooked potatoes, but don't give him the skins. Better safe than sorry.
