What was the original use for the canine FIELD SPANIEL?

chasing stuff in the fields in Spain .

They were orignally bred for showing.

Bird dog

Spaniels are general purpose bird dogs that "flush" game, as opposed to the pointers and setters that just mark it for the hunters to flush themselves. Flushing just means beating the bushes or running into the brush to chase the birds out for hunters to shoot. Spaniels also retrieved the birds once they were shot.
